Chickens: Columbia Center for Urban Agriculture

Tonanzios

Visited Tonanzios out of curiosity on Saturday night after Dak mentioned it in class. Chatted with the owners son, Drake, who told me that they shoot all the animals they serve and they have a farm where they raise exotic birds and fish for consumption.

Unfortunately I could not afford the food there, but Drake seemed very friendly and I will go back to photograph some more.

Drake Tonanzio displays one of the alligator heads they have in the freezer. They take one trip to Louisiana to kill all the alligators they need for the whole year. They got about 100 last year.

Leftovers from MU dining halls

MU dining halls produce approximately 270 tons of food waste annually. All of this is transported to the Bradford Research Farm, mixed with manure and composted into fertilizer which will be used to grow vegetables that will be again served in the dining halls.
